Healthy Afternoon Salad with Blueberry, Cucumber, and Quinoa

This fruit and veggie salad can be an excellent afternoon snack. Quinoa contains more protein than rice or wheat, Blueberries are loaded with antioxidants and fiber, and the cucumber can help keep you hydrated. Essential vitamins and minerals are also contained in delicious fresh spinach.

> Ingredients:
## 1/2 cup cooked Quinoa (chilled)
## 1/4 cup fresh Blueberries
## One small Persian Cucumber (diced)
## One tsp Olive Oil
## One cup fresh Spinach
## Juice of one Lemon
## Salt and Pepper to taste (optional)

Preparation:
Take one large bowl and combine the following ingredients quinoa, cucumber, lemon juice and salt and pepper. Next step on a plate, arrange the fresh spinach leaves, previously prepared mixture with quinoa, and top with fresh blueberries. Enjoy!
