Mediterranean Scrambled Eggs with Cherry Tomatoes and Mushrooms

• Four egg whites
• 1⁄4 cup chopped Portobello mushroom
• 1⁄4 cup chopped cherry tomatoes
• Two basil leaves (chopped)
• One tablespoon olive oil (plus 1⁄2 tsp. for drizzling)
• 1⁄2 tablespoon salt
• 1⁄2 tablespoon garlic powder
Firstly Heat olive oil over medium heat. Then add tomatoes, mushroom, basil leaves, salt, and garlic powder. Cook until mushrooms are soft (around three minutes should be enough). After that drain any liquid from the vegetables. Now take a separate pan and spray it with nonstick cooking spray. Turn heat to medium and add egg whites. At the end when egg whites slowly but surely become solid, add sautéed vegetables. Stir until egg whites are solid. When it is done remove from pan, drizzle with 1/2 tablespoon olive oil.
