This plant-based Soup is Satisfying and Packed With Vitamins and Minerals

Ingredients:
• Several vegetables cut into cubes (celery, carrot, corn, zucchini, spinach, broccoli)
• One onion
• 3 cloves garlic
• One package of pasta for soup without eggs
• One stewed tomato
• olive oil, salt, black pepper, water

Preparation:
Firstly heat the olive oil in a large pot and add the chopped onion and garlic. After that add all the veggies with the exception of spinach and mix until it becomes soft. Next step adds salt, pepper, pasta, stewed tomatoes and cover with water almost to the top of the pot. When the soup will begin boiling, reduce the heat and continue to cook on medium heat. Towards the end of cooking, add the last ingredient the spinach and cook for five minutes. Serve hot and enjoy.
